Description

Acquapazza Gourmet is a small company founded in Cetara, on the Amalfi coast. Their tradition is linked to seafood and in particular for the processing of one of the symbols of the land: the pouring of anchovies, which creates colatura di alci.

Acquapazza Gourmet produces colatura according to traditional methods-- anchovies caught exclusively in the gulf of Salerno are layered with salt in chestnut barrels; the layers are then covered with hard wood and weights. As it ages, the amber colored liquid begins to surface. This unique product brings all the cetarese flavor to your table.
 
Colatura is the Italian fish sauce with a much more complex and intense flavor than the Asian version, but slightly less fishy. 
 
Mix a half of teaspoon of colatura with extra virgin olive oil and crushed garlic for a delightful sauce on pasta or sauteed greens. Add a few drops to your Caesar dressing, grilled vegetables, scallops, or anything you want a splash of umami flavor.
