Aged for at least a year, then slowly refined with an exclusive method. It is grown around Vercelli in the Piedmont region of northern Italy, an important rice center since 1500. In the 1990s the family cultivated more than 600 acres of rice, but felt they wanted to specialize in carnaroli rice. Therefore, they reduced their plantings to a mere 140 acres in order to monitor and refine their crop.
They preserve it by vacuum packing in cans. Perfect for any recipe because the grains are firm and flavorful. The rice absorbs seasonings without losing the proteins and vitamins. As the company says, "Using Acquerello for a risotto is never wrong."
