In this classic Italian tradition, authentic Columbus salame is made with a unique Fiore bloom – a soft white coating of aromatic mold, similar to the rind of Brie cheese. Fiore is one of the secrets of Columbus' premium salame. During the dry-aging process, the Fiore develops to allow the salame to age naturally and enhance its flavor. For your convenience, it is removed, yet the superior flavor is maintained.
Serve either as a traditional centerpiece for an appetizer tray, combined with a hearty cheese (an aged pecorino or provolone) or as a highlight of a submarine sandwich. Delicious any way you serve it!
Pepper Salami--
Aged a full eight weeks, this country-style salame is mildly spiced, laced with wine and hand-rolled in freshly cracked peppercorns.
Sopressata Salami--
Robust with sweet fennel, hot peppers, paprika and red wine, this sopressata is every bit as authentic as the hand-cut, hand-crafted varieties that were made centuries ago. The distinctive flavor of the coarsely ground meat is brought out by a natural, two month aging process.
