What the heck is double zero or tipo "00" or dopio zero flour?  In Italy, soft wheat flours are classified as 1, 0 or 00.  The "00" is the most highly refined, finely ground flour, talcum soft.  Made especially for delicate pastries and doughs.  While finely ground, the flour retains a high protein level.
