Pine Cone Bud Syrup is extracted from Mugo Pines in the higher regions of Italy's Dolomite region. Eleonora Cunacia, who learned from her grandmother how to identify, harvest and cook the wild, natural products found in the forest surrounding their home, is the only one who can produce a syrup as exquisite as this! Eleonora, who was first in the restaurant business, named her company Primiticizia as a play on the word "primitive." Working with her brother, Giovanni, they harvest and prepare natural foods in a slow, old fashioned way to get the best of the crop at the peak of the season. The buds are pollinated, then placed in glass pots that bask in the sunshine until late autumn. The resulting product is filtered, sugar is added, and then a nice slow cook brings out the golden, absolutely delicious syrup.
What do you do with this golden liquid? Drizzle is over goat cheese, ricotta, yogurt, gelato or panna cotta. Perfect with pears, sauteed apples and maybe even mascarpone. Ummm. Use your own creativity to use this natural syrup that has a taste of rosemary and delicate pine.
