Lampascioni, shallot-like bulbs of the wild hyacinth plant, grow profusely all over Apulia.  These are one of the most prized delicacies of the region. They taste onion-like, but they have a sweet, root vegetable-like flavor. Crunchy. Savory. Smooth.  You'll want to eat quite a few, but try to save a few for your guests.

Simply wild onions, olive oil, vinegar and salt.  

Delicious as a starter, they are also an ideal when warmed as an accompaniment to meat and steamed fish.
