Beginning in 1900, the Roi family began to cultivate olives. Over four generations, they have expanded their fields, converted to environmentally friendly, organic olive groves, and refined their processing methods.
What is extra special about this olive oil? It is made from delicious Taggiasca olives that are grown only in Liguria. If you haven't tried these olives, seek them out on your next visit to our store in Minneapolis or your local fine food delicatessen. Amazing is one description of the delicate, sweet flavor of these olives. The Roi family produces very limited quantities of this fine olive oil--approximately 15,000 bottles per year. Their two-stage cold process production method achieves an oil of low acidity obtained by dripping, not pressing, the Taggiasca olives. Four hundred kilos of olives are used to produce a mere eight pounds of this exceptional oil. With all this special care, you know the olive oil is superb.
